Lentil Soup
Ingredients
- 16 oz brown lentils
- 1 lb ground beef
- 2 tbsp grapeseed oil
- 4 cups chicken stock
- 4 cups water
- 1 medium yellow onion, diced
- 3 stalks celery, diced
- 3 large carrots, diced
- 1 tsp ground cumin
- ½ tsp dried thyme
- 1 tsp old bay seasoning
- 1 tbsp garlic
- ¼ cup tomato puree
- kosher salt and pepper to taste
Directions
- Sauté veggies in oil in stock pot for 6-8 minutes
- Add ground beef and seasonings, cook and break apart
- Add stock and water, bring up to a boil
- While waiting for soup to boil, sift through lentils and remove any rocks
- Add lentils, reduce heat and simmer for 40 minutes
- Stir soup every 5-10 minutes to prevent scorching on the bottom
- Soup is done when lentils are soft and start to fall apart
- If you want a thicker soup, use an immersion blender and blend some of it until you get your desired consistency
