Lentil Soup

Ingredients

  • 16 oz brown lentils
  • 1 lb ground beef
  • 2 tbsp grapeseed oil
  • 4 cups chicken stock
  • 4 cups water
  • 1 medium yellow onion, diced
  • 3 stalks celery, diced
  • 3 large carrots, diced
  • 1 tsp ground cumin
  • ½ tsp dried thyme
  • 1 tsp old bay seasoning
  • 1 tbsp garlic
  • ¼ cup tomato puree
  • kosher salt and pepper to taste

Directions

  1. Sauté veggies in oil in stock pot for 6-8 minutes
  2. Add ground beef and seasonings, cook and break apart
  3. Add stock and water, bring up to a boil
  4. While waiting for soup to boil, sift through lentils and remove any rocks
  5. Add lentils, reduce heat and simmer for 40 minutes
  6. Stir soup every 5-10 minutes to prevent scorching on the bottom
  7. Soup is done when lentils are soft and start to fall apart
  8. If you want a thicker soup, use an immersion blender and blend some of it until you get your desired consistency
