Creamy Chicken and Kale Soup

Ingredients

  • 1 whole rotisserie chicken (meat pulled and chopped, Costco brand is best for size) 1
  • 2 medium carrots 2
  • 1 large leek (sliced into half moons and well rinsed)
  • 2 stalks celery
  • 1 large bunch kale (well rinsed and chopped into 1-inch pieces)
  • 4 cups chicken stock
  • 4-6 cups water
  • 2 cups half & half (or heavy cream)
  • ½ tsp old bay seasoning
  • 1 tbsp garlic
  • ½ tsp white pepper
  • salt and pepper to taste

Directions

  1. Sauté the carrots, onions, leeks, celery until soft
  2. Add the chicken, garlic and seasonings, cook for a few minutes until seasonings become aromatic
  3. Add chopped kale, stock and water and bring to a boil and simmer for about 20 minutes
  4. Add half & half, bring soup back to simmer and take off the heat. Adjust for seasoning.
Chopped bacon, hot sauce and fresh chives are a good way to top the soup.

  1. Make stock with the leftover bones if you feel like being extra ↩︎

  2. Swap the carrots for celery if you are making this soup for keto. Add two chopped potatoes if you don’t want to keep it keto. ↩︎
