Pepperoni Seasoning


Ingredients

  • 1/2 tsp liquid smoke
  • 1 1/2 tsp black pepper
  • 1 tsp mustard seed
  • 1 tsp fennel seed
  • 1 tsp crush red pepper flakes
  • 2 tsp smoked paprika
  • 2 tsp curing salt
  • 1 1/2 tsp garlic powder
  • 3/4 tsp onion powder
  • 1 1/2 tsp granulated sugar

Directions

  1. Grind all the whole spices in a spice grinder
  2. Mix everything together and add to meat for a 1-2 day fridge curing

This is the amount of seasoning used per pound of ground meat
