Non-spicy, kid-friendly chili with no chunks of veggies
Ingredients
- 2 lbs ground beef, pork, chicken or turkey
- 1 tbsp grapeseed oil
- 4 cups beef or chicken stock
- 14oz can fire roasted tomatoes
- 1 medium yellow onion
- 2 bell peppers, any color
- 2 cans of beans (navy, pinto, great northern)
- salt and pepper to taste
- 2 tsp ground cumin
- 2 tsp garlic powder or 3 fresh cloves
- 1 tbsp chili powder
- 1 cup corn (optional)
- 1-2 jalapenos (optional)
Directions
- Roughly chop onions and peppers
- In a blend, puree the stock, onion, peppers, tomatoes and garlic (if using fresh)
- In a dutch oven, heat oil and add ground meat
- Press meat down into pan to sear
- While meat sears, cover the top with cumin, garlic powder if using), chili powder and a generous amount of salt and black pepper
- While meat cooks, open beans, drain and rinse
- When meat is seared and fully cooked, break it down into smaller pieces
- Add all ingredients from the blender and rinsed beans to the dutch oven
- Bring up to a near boil
- Reduce heat and simmer for a minimum of 30 minutes, 1 hour is better. Stir occasionally
- Before eating, adjust for seasoning
Notes
To keep this kid friendly, keep out the spicy stuff and just add sliced jalapenos or hot sauce at the end. Sides that go well with this are sour cream, shredded cheddar, sliced american cheese, manchego cheese, saltine crackers, corn bread, fritos, hot sauce, sliced red onions.
Everything should be able to be cooked in one pot. The ground meat is easy to break apart if you use a potato masher.
