Creamy Chicken and Kale Soup


Ingredients

  • 1 whole rotisserie chicken (meat pulled and chopped, Costco brand is best for size) 1
  • 2 medium carrots 2
  • 1 large leek (sliced into half moons and well rinsed)
  • 2 stalks celery
  • 1 large bunch kale (well rinsed and chopped into 1-inch pieces)
  • 4 cups chicken stock
  • 4-6 cups water
  • 2 cups half & half (or heavy cream)
  • 1/2 tsp old bay seasoning
  • 1 tbsp garlic
  • 1/2 tsp white pepper
  • salt and pepper to taste

Directions

  1. Sauté the carrots, onions, leeks, celery until soft
  2. Add the chicken, garlic and seasonings, cook for a few minutes until seasonings become aromatic
  3. Add chopped kale, stock and water and bring to a boil and simmer for about 20 minutes
  4. Add half & half, bring soup back to simmer and take off the heat. Adjust for seasoning.

  1. Make stock with the leftover bones if you feel like being extra ↩︎

  2. Swap the carrots for celery if you are making this soup for keto. Add two chopped potatoes if you don’t want to keep it keto. Chopped bacon, hot sauce and fresh chives are a good way to top the soup. ↩︎
