Ingredients
- 1 whole rotisserie chicken (meat pulled and chopped, Costco brand is best for size) 1
- 2 medium carrots 2
- 1 large leek (sliced into half moons and well rinsed)
- 2 stalks celery
- 1 large bunch kale (well rinsed and chopped into 1-inch pieces)
- 4 cups chicken stock
- 4-6 cups water
- 2 cups half & half (or heavy cream)
- 1/2 tsp old bay seasoning
- 1 tbsp garlic
- 1/2 tsp white pepper
- salt and pepper to taste
Directions
- Sauté the carrots, onions, leeks, celery until soft
- Add the chicken, garlic and seasonings, cook for a few minutes until seasonings become aromatic
- Add chopped kale, stock and water and bring to a boil and simmer for about 20 minutes
- Add half & half, bring soup back to simmer and take off the heat. Adjust for seasoning.
