Mom's Baked Bean Casserole


Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion, small dice
  • 1 lb bacon
  • 64oz canned baked beans
  • 14oz can kidney beans, drained and rinsed
  • 14oz can red beans, drained and rinsed
  • 14oz can lima beans, drained and rinsed
  • 1 tsp liquid smoke
  • 1 1/2 cups barbecue sauce
  • 1/2 cup brown sugar
  • 3 tbsp apple cider vinegar

Optional Ingredients

  • 2 tbsp hot sauce

Directions

  1. Slowly render the bacon until crispy in a sauté pan. Put aside, blot dry and chop into small bits
  2. Save about a tablespoon of the rendered bacon fat, and sauté the onions and ground meat until the meat is cooked through
  3. Put all the ingredients in a crock pot and mix well
  4. Cook on low heat for 6-8 hours, stirring occasionally

Notes

Not everyone likes kidney or lima beans, so those can be swapped with great northern, navy or black beans instead.
